Ode to Joy has such a beautiful melody and the build up to it is genius.
Similarly I love Zadok the Priest which has a lusicrously long Bach-esque organ intro followed by an absolutely belting song. Remember singing this in the school choir when we played with an adult orchestra and it is so uplifting.

Another two that reduce me to a jelly are:
